Kaya Toast with coconut pandan - a staple dish of Malaysia and Singapore. The filling is a thick layer of rich coconut jam made with coconut, egg, pandan and palm sugar. Kaya toast literally saved my life after getting super sick and having no appetite (shocking for me I know) while wanting to eat safe simple foods until I was back to my ravenous self. Served with a coconut latte, it was perfect.
Last week’s Intuitive Eating group @barre3tucson has me so excited for the coming months. ⠀
It’s been a little nutty around here. I just started a new part-time job at the UofA, have an upcoming conference presentation, family life, and in general I tend to take on a lot. But, I also know I do this because I am very passionate about my work. I love talking to people about improving their relationship with food and movement, and empowering others to be their own nutrition experts! ⠀
I have had some time today to reflect and I am so grateful for all the work I get to do! Breaking up with diet culture isn’t easy and doing it alone is not required. I’m pretty honored when I get to be apart of your adventure to being at peace with food and your body! 🥰⠀

Before your child eats a food, he or she will be subconsciously exploring and evaluating its sensory characteristics. ⠀
There are up to 32 different sensory steps your child will go through to explore each and every food.⠀
☑exploring how the food looks from across the room then as it gets closer and placed on the table in front of him.⠀
☑What it sounds like when its squashed, broken in two or splats the floor!⠀
☑Smell is being assessed too and the scent of food gets stronger as it comes closer to your child’s face. ⠀
☑And importantly touch. A dry food like a cracker feel very different to a wet food like jelly and this feels different again if you use a spoon or a finger.⠀
☑Only when all these sensory characteristics have been fully explored will your child consider tasting a food, and sometimes this may mean moving it around their mouth and spitting it back out!⠀
These are all important sensory processing steps and eating is the most complex sensory task a young child has to do.⠀
He’s forming connections in his brain which ultimately lead to learning how to eat as well as developing cognitive skills such as decision making, intellect and even behaviour.⠀
Bear this in mind when your LO is playing with his food and not eating. He’s exploring the sensory characteristics of the food which will ultimately teach him how to eat. ⠀
It’s all part of the process so let him go for it!⠀

It's Sweet Treat Friday!! Who doesn't love a chewy chocolate chip cookie!? This Almond Flour Chocolate Chip Cookie recipe is gluten-free, vegan and paleo friendly. T-minus 5 hours until the holiday weekend begins!! This is the perfect treat to make for your family or maybe enjoy them curled up on the couch watching Netflix! You know I love my desserts but the best part, you can omit the baking soda and vinegar for an edible cookie dough. Now what's better than eating the dough and getting that cookie fix in. ..........................................................
2 cups almond flour @bobsredmill
1/4 cup melted coconut oil @nutiva
1/4 cup maple syrup
1 tsp cinnamon @mccormickspice
1/4 tsp sea salt
1/2 tsp baking soda
2 tsp vanilla extract
1 tsp apple cider vinegar
1/2 cup dark chocolate chips @enjoylifefoods
1️⃣Preheat oven to 350ºF & line a large baking sheet with parchment paper.
2️⃣In large bowl, combine the almond flour, oil, maple syrup, salt, baking soda, cinnamon, vanilla, and vinegar. Stir well to create a uniform, sticky dough. Fold in the chocolate chips.
3️⃣Drop the dough by heaping tablespoons onto the baking sheet, then use your hands to gently flatten and shape them. (They won't spread a lot with baking....)
4️⃣Bake until the cookies are firm around the edges, ~12 minutes at 350ºF.
5️⃣Remove and let them cool on the pan for at least 10 minutes before attempting to remove them. They will firm up more as they cool. Serve warm or at room temperature.
Note: These cookies can be stored at room temperature for up to 3 days, but they will have the best texture in the fridge.

Balance out the bowls of veggies and chips with a fresh veggie platter. 🥕🥒 *
And lastly, don't forget to hydrate!💧 Water is always important for digestion and the absorption of nutrients, but when the temps are rising outside, it's doubly important to ensure stay hydrated! 🌞

We aren’t trying to take away all your fun or tell you what you can and can’t eat. Instead, we educate, guide, and motivate clients and patients to make healthful choices and support the development of a healthy eating plan that works for each individual.
Also, I don’t really care what you eat, and I’m not judging. I’ve been told so many times “Oh, don’t look at what I’m eating!” followed with an explanation of why they are eating it. If I’m looking at it, it’s probably because I want to eat it too. 😋
So, please quit hiding your food from me unless you’re just trying to keep me from eating your snacks. In that case, hiding it is probably a good idea….especially if it’s Hot Cheetos. 😛

🌯 Burrito bowls are an excellent way to incorporate more plant proteins into your diet.
Nutritionally speaking, black beans can be considered both a carb and a protein. They are a good source of both soluble and insoluble fiber, which supports your health in a number of ways. The fiber helps modulate the rate at which your body uses the available carbohydrate. That keeps your blood sugar stable. Fiber supports fit health by not only keeping things moving along, it helps to feed the good bacteria that life in your intestine. Those bacteria serve many roles and we want to keep them well-fed. A cup of cooked black beans contains 15 grams of fiber. That’s roughly half the RDA.
Fiber also makes the protein in plant foods more difficult to utilize, to if you’re following a vegan or vegetarian diet, you’ll want to me mindful of eating enough.
If you’re eating a mixed diet that includes animal proteins, that shouldn’t be an issue as long as you are consuming adequate calories and and a balanced diet.
Pairing beans with rice creates a complete protein, but it’s not necessary to eat them at the same time. We used to think that protein pairing needed to happen within a meal, now we understand that eating a complete complement over the course of a few hours or the day is fine.
Adding different veggies to your bowl brings different flavors and textures. I like the creaminess of avocado alongside the crunch of lettuce, brightened by the acid in the tomatoes. Cheese brings in salt and cheesy-goodness, but it’s optional..
This bowl could easily be deconstructed and sent in a bento. I do like serving them in a bowl, as there is something very satisfying about meals served as bowls.

A huge thank you to @cabotcheese , @siggisdairy , and @newenglanddairy for making my Middle School and High School health fairs so successful! The kids came for Cabot's cheese and stayed for the recipes (especially Siggi's smoothies) and the loads of information that I got about dairy! 🥛 I love being able to use these resources to teach them about important nutrition habits!

When you think of it all, it's a lot right? So where is the time to: ❌ Count calories or macros ❌ Pee on a stick to check ketones ❌ Keep track of points ❌ Log everything you eat ❌ Worry about if a food is "on plan" or allowed 🙄 .

Il platano è un frutto tipico dell'America Latina, dove viene consumato pressoché quotidianamente. Sebbene sia apparentemente simile ad una grande banana (verde o gialla a seconda del grado di maturazione), viene utilizzato principalmente per ricette salate: fritto, in purea o bollito (come quello in foto). È soprattutto fonte di carboidrati complessi (oltre che di potassio e magnesio) per cui va utilizzato come sostituto di pasta, pane, patate ecc.
Fritto è buonissimo ma, per ovvi motivi, va consumato preferibilmente in altri modi e solo ieri ho scoperto quanto è buono anche così. Io non lo conoscevo fino a pochi anni fa, e voi lo avete mai mangiato?

Yeşil mercimekleri çok az haşlayıp içine bulgur ve küp küp doğradığım havuçları ekledim ve pişene kadar haşlamaya devam ettim. Soğuduktan sonra içerisine köz biber (fırında veya tost makinasında yapabilirsiniz), dereotu ekledim. Daha sonra çok az kuru nane, limon, bir tatlı kaşığı zeytinyağı ve çok az tuz ekledim.

1 year ago today I left my full-time job, and I’ve been making batches and batches of these enchiladas ever since! Taking that leap was so. so. scary. There were days/weeks/months that I questioned my decision, but looking back now I know it was the right one. I can’t thank all of you enough for your support, enthusiasm, and excitement about the food and wellness tips I share.
